1 1/2 lb fish fillets (use halibut, cod, sole, red snapper, sea bass), cut into 2-inch pieces
Touch of dry oregano, Tabasco, thyme, pepper

Method
1 Heat olive oil in heavy large pot or Dutch oven over medium-high heat. Add chopped onion and garlic and sauté 4 minutes. Add parsley and stir 2 minutes. Add tomato, tomato paste and cook 2 minutes longer. 2 Add clam juice, dry white wine, and fish and simmer until fish is cooked through, less than 10 minutes. Add seasoning. Salt to taste. Ladle into bowls and serve.
Serves 4.
I seldom use clam juice or shellfish stock. I prefer to boil the heads 'n tails of the fish and then strain. It needs no salt and the stock will last forever in the freezer.

Every week I make a tupperware pot of salad and keep it in the fridge.
I can just take a spoonful or two out when I want.
It's only a basic salad.
I boil a few small new potatoes until they are cooked but firm. Finely chop a stick of cellery and a spring onion. Then I add some garlic/salt and a few spoons of Mayo.
I let it cook in the fridge and it improves over several days 'cause the garlic/salt gets taken in more with the veggies.
Often for lunch I will have a salami (French of course) sandwich, some of my salad and some home made fruit juice. I have a contraption that does the juice for me ! I throw some tangerine segments into it and then some apple and finally a chopped banana (that gives it thickness.)
This gives me about a pint of juice but it also gives me a lot of pulp which I use when I am making curry.

A mini Dagwood sandwich with 3 slices of bread, 3 slices of cheese, 3 kinds of relish and meat from 3 different kinds of animals (beef, pork and turkey), with a orange juice and dessert of a banana and granola bar.
