Coconut ice cream
1 c milk
1 can cream of coconut milk (make sure it's not coconut juice!)
1 1/2 c heavy cream
1 1/2 c sweetened flaked coconut - optional, can also be slightly toasted. Process seperately into semi-fine before adding or it'll be chewy.
Another option is adding 1 t of vanilla extract.

Combine milk, c of c and mix completely, add cream, coconut, pour into mixer container, prepare per processor instructions. When done, empty into storing container w/cover, freeze.
* When nearly done, try tossing in slight additions like crushed pineapple or grilled pineapple pieces, marischino cherrie pieces or ripe black cherries, mango, papaya, banana, maybe some chocolate syrup, or jams..., but it's good on it's own.
