Love the stuff! I was just in MN and had a dish of prawns with "rooster
sauce" was Sriracha with mayo and herbs!

I always add a splash (well, a squirt, to be more precise) to a bowl of pho ga.

ROOSTER SAUCE!!!!! I LOVE the stuff, and my man loves it as much as I do!! We thought we were the only ones who called it 'rooster sauce'

I use it in soups, curries, stir fry, veggies, even sandwiches - just spread on the bread like mustard. I've taken it to picnics and bbqs, camping trips, and there's always a giant bottle on the boat. Did I forget to mention that I LOVE it?

I like hot sauces, but usually prefer the simplicity of Tabasco (peppers, salt, vinegar), mostly because I am also a vinegar fiend. However, on certain foods, Sriracha cannot be substituted. It appalls my Filipino friends that I almost always put it on chicken adobo or pork adobo; I also prefer it to Tabasco on heavily garlic-flavored foods. Yes, Sriracha is good food.

It's the party the next day at the other end that puts me off.

Bet you recognize the bottle that sits on the tables in Thai restaurants (sorry it is tilted, I can't make it upright, nor smaller):

Yes, the sauce referenced is mildly titillating. However, if you want the goddesses in a lascivious frenzy, then use some Habanero chili salsa with a squeeze of fresh lime juice. You will be still feelin' it the next day, if you know what I mean. Had some today and goddesses are calling to me.

Is it at every table in a Chinese restaurant here?

Yea, most Asian restaurants. It is one of the great things about living on Oahu, all the ono Asian restaurants. We eat at one at least once a week, and will walk from work if we are downtown at lunchtime.

Makes a great dipping sauce for Fries and Onion Rings all by itself or mix with Tartar Sauce for a spicy Fry Sauce.
