    Try marinating your turkey in rock salt water overnight. This will help retain the juices when roasting. Even the white meat comes out succulent.

    One year instead of turkey I bought a dozen stuffed cornish game hens from one of those wholesalers in Kakaako. These things come frozen and are about the size of grapefruits. You simply stick them in the oven frozen and all and roast them.

    But if you're going to a holiday dinner and have to bring a dish, reserve your Canadian Duck from R. Field's and don't forget that bottle of Beaujolais Nouveau Village. Only available thru R. Fields. You can buy a bottle of Beaujolais Nouveau at Safeway but if you want the authentic stuff get the Village where it's made there. The stuff at Safeway is made elsewhere. The labels look identical however look for the word "Village" and you'll know it's authentic.

      Last year was my first attempt at making Jook (also called "chook" or Congee), a Chinese rice porridge-soup that's very popular in Hawaii.

      Local style Jook is usually made with the left-over turkey carcass after Thanksgiving and Christmas. The recipe I followed was from an old Hawaii Chamber of Commerce book.

      Gotta' admit, my Jook came out so good, we enjoyed that more than the Thanksgiving meal itself.

      Definately a key to enjoying Jook is the toppings you add. Such as shredded lettuce, chopped cilantro, green onion, water chestnuts and cashews. The contrast of the soup with the flavor and texture of the toppings really seal the deal.

      Broke da' mout' is the word.

      I'll share the recipe I followed later.

        Good reminder, cw --- the latest batch of Beaujolais Nouveau comes out tomorrow (Thu. 11-17.)

        Has anyone on HT ever had an opportunity to try a "turducken"? It is a chicken, stuffed inside a duck, stuffed inside a turkey - with stuffing between each layer. Seen 'em on TV, read about them in the recent National Geographic, but never had a chance to try one...

                    Take it a step even further and stuff all of that inside a kalua pig then throw the whole buggah in da' imu.

                    Then what do you get?

                    KALUA PITURDUCKHENLUT

                    That sounds like some kind of German sausage.
