  • Homemade ice cream

Who remembers making the best at home on the old crank machine, anybody still do it?

    Post your fave recipes!

    Coconut ice cream

    1 c milk
1 can cream of coconut milk (make sure it's not coconut juice!)
    1 1/2 c heavy cream
1 1/2 c sweetened flaked coconut - optional, can also be slightly toasted. Process seperately into semi-fine before adding or it'll be chewy.
Another option is adding 1 t of vanilla extract.
    *

Combine milk, c of c and mix completely, add cream, coconut, pour into mixer container, prepare per processor instructions. When done, empty into storing container w/cover, freeze.

    * When nearly done, try tossing in slight additions like crushed pineapple or grilled pineapple pieces, marischino cherrie pieces or ripe black cherries, mango, papaya, banana, maybe some chocolate syrup, or jams..., but it's good on it's own.

    Re: Homemade ice cream

I remember at some summer camp during my childhood making ice cream, only instead of a crank we just put it all inside a coffee tin or something and then sat in a circle rolling it back and forth to each other. It was fun! Delicious too.

      Re: Homemade ice cream

There's an old hand-crank machine for sale at our local market on the antique dealer's stand, but he thinks it's a butter churn and won't take less than 50 euros for it, so that's out for me.

Somewhere on the Internet, there's a method for making ice cream by butting the mixture into a ziplock bag and then putting that into another, bigger ziplock bad which has been filled with rocksalt and ice. The idea is to roll it and knead it til the ice cream is set enough to eat.

Freeze chunks of fruit...berries, banana, strawberries, etc.. Freeze youghurt (I freeze the almost out of date ones). Put yoghurt, fruit, and milk and/or drink syrup (Malolo) into the bowl of a food processor and pulse til thick and creramy and delicious. Sometimes we also add jam.

PS I was at the doc's reading magazines while waiting and there was a good recipe for a milkshake made with banana, strawberry, yoghurt, those little Haribo strawberry Tagada candies, and marshmallows which had been melted into a glass of milk before being cooled and added to the milkshake. I'm planning to try this tweaked a bit as a processor ice cream.

Tip for preventing quick melting - grind up instant tapioca for 'tapioca starch' and add 1 1/2 T to the contents prior to mixing.
