  • Mac Salad - why is mine dry?

    Pick any recipe. When I make it, why is it kind of dry?

    When you get a plate lunch anywhere, it's "perfect."

    I figure I used better ingredients than stores and restaurants when it's home made.

    What am I not doing right?

      Can be a few hours to 2-3 days max. I try not to keep it too long.

        Cook the noodles longer, add more mayo.

          Tired that. And more Mayo makes it taste more like Mayo.

          Could it be water? I'm guessing stores and restaurants don't have that much time to drain and cool. They just make em.

            I always use Best Food Mayonnaise.

            And Boil and rinse with cold water.

            Let stand or cool off in ice box before mixing.

            You can add the following:

            Celery, onions, carrot and olives.

            I mix Potato too.

            And don't forget your seasonings.

                      Find out how they made the potato salad at the now defunct Fuji's in Kaneohe and you'll have the best around. I had the secret but forgot it already...

                        What is dry? The macaroni or the potatoes?

                        I usually boil the potatoes (instead of baking or microwaving). Then, peel and dice the potatoes while they are still hot, and mix everything together. The hot potatoes make everything creamier... if you wait until the potatoes cool before mixing, they will seem dry.

                        Also, I think it depends on the type of potato you use. Some potatoes are soft-mushy-creamy and some are harder/drier. Sorry, I haven't made mac-potato salad since I was a kid, and I don't remember which works best.

                          Everything. It just not wet. Clumps up. Meaning it sticks to the spoon - that's the best example. Just does not taste like what any (your choice) plate lunch places.

                              Potatoes can have a drying effect, as they are hygroscopic; perhaps you should add them last to the mix.
