My class is having a little potluck tonight, so I ate what I prepared: tortillas wrapped around roasted turkey breast, a bit of stuffing, a sliver of Monterey jack cheese, and a light smear of homemade pistachio nut pesto. Yummy.

Turkey Moco ... the unofficial name.

Leftover stuffing heated through in the oven, topped with chunks of turkey re-heated in a little simmering broth, topped with two over-medium eggs --with turkey gravy all over.

Ono!

The stuffing I made is moist, but not the really wet type that uses cups and cups of broth. I suppose the turkey moco could be made with the wet type too, however.

Even tho I was stuffed from lunch, reading this made me want to eat again. So I got some leftovers together, and ate again. Ahh...I'm livin the dream. Thanks a lot, Erika. I never woulda thought about combining some of my favorite foods: gravy, roast turkey, stuffing, over easy eggs, and more gravy with a Coke on the side. It's like I found my soulmate in this turkey moco.

A toast to Erika, The Matchmaker!

You're welcome!!

I'm so glad you were motivated by my small-kine inspiration.

I figured, there's enough comfort-food-junkies on this board that NOT to share the "recipe" would be nearly criminal ... and I just can't live with that kind of guilt.
