    A Chef in need!

    So, I am making Chicken Katsu, got the chicken down(no biggie) but I was wondering if any of the fine folks here at HT have a Katsu sauce they would like to share. Did the 'ol Google thing, but nothing is really standing out.

    I did a write-up on my blog specifically about Tonkatsu sauce. Of course chicken is just a different, and totally suitable substitute for pork, the latter being the "ton" in katsu.


    Tonkatsu with Bull Dog and Ikari brand Tonkatsu sauce (a comparison)

    I highly suggest the Bull Dog brand, which should be available in your local supermarket's asian section. Or even better yet, if you have a market that specializes in asian groceries.

    The Bull Dog brand tastes just the one I'm familiar with from a Tonkatsu shops in Tokyo. It has the perfect balance of tang and sweetness, which compliment the savory pork (or chicken) absolutely brilliantly.

    There's quite a few other Japanese brands out there now, but I think Bull Dog brand has the highest distribution in the US. Otherwise, the Kikkoman Tonkatsu sauce, while not as authentic as Bull Dog, works.

    Remember to put finely sliced cabbage as a bed underneath the katsu. That's make's all the difference in texture and finished flavor.

    I'd also recommend serving hot Miso soup along your Chicken Katsu. That helps cut into the "oilyness" of the katsu.

    For your breading station sequence, dip the boneless chicken (or pork) in flour, then egg, then panko. Easy.

    As far as making your own Tonkatsu sauce, most local restaurants here mix Ketchup with Worcestershire sauce, which personally I think is gross. Blech!

    The traditional Tonkatsu sauce is often a highly kept secret among the various Tonkatsu shops, and is a complex recipe as seen here:

    You can try, but (obviously) it's much easier to buy it already made.

      the easiest route to go is to mix ketchup and shoyu and a little bit of oyster sauce. There will be those who consider such recipe blasphemous, but it works in a pinch.

        Here's a recipe I found online:

        INGREDIENTS:

        1 cup catsup, 1/2 cup worchershire, 1/2 cup sake, 2 tablespoons ginger, 2 tablespoons garlic, 1/4 cup sugar, 1/4 cup mirin.

        Put all above ingredients in sauce pan and bring to a boil over medium heat stirring occasionally. Reduce to a simmer for 25-30 minutes skimming any foam that rises to the top. Will keep refrigerated for 4weeks. Yield: 3 cups

          All the methods I have found, all seem to you shoyu, and catchup...from there that is where it get "different"

          Pomai, you will be glad to know that I am offering Miso soup too. Wednesday, our whole menu is a "Taste Of Japan", hence the need for the sauce.

              That's pretty much the recipe I'm familiar with although I'm good to go with just the Ketchup oyster sauce, and ketchup with a pinch of sugar if you don't have the other ingredients laying around.
              Life is what you make of it...so please read the instructions carefully.

                  Ketchup and Worcestershire is what most of the local places use, but I'm going to say amen to Bull Dog, the only bottled brand my friends and I will use. It is easily the best of the prepared sauces, and what my friends used while in Japan.

                      my version: unsweetened ketchup, frank's red hot sauce with worcestershire sauce and/or A-1 steak sauce.

                      eric likes to mix ketchup and sriracha.
