    Well, after 2 weeks of negotiations between a few places, I have a job.

    Arancino Di Mare


    There were a LOT of options but ultimately this had the best "overall" feeling of what I wanted. I will be working AM hours(after being groomed)so I have nights with AF, 5 day work week(Sundays and Mondays off), and compared to my old mainland job of the last few years a VERY mild week at 45-50 hours as compared to 80-100. Having been the Executive Chef for the last 9 years it will be awesome to just be a manager and "clock in and out" with out all the headache.

    I worked last Friday to feel things out. I am not "wild" about Italian(my first restaurant I opened was Italian and kicked my ass with almost 1000 people a night)but I must say, the food here is well rounded, not over stated yet attractively presented, and overall fundamentally correct. I can do Italian all day with my eyes closed so it will just be a matter of learning how they are doing it and adapting to it. People seem VERY nice and very warm and welcoming, restaurant is attractive, plate ware is sexy, and they are offering some pretty cool offerings that are new to me. Oh, and they do have a GREAT wine list!

    Anywho, I am pleased. Just wanted to pass stuff along. If anyone ever wants to come down and have breakfast/lunch/dinner, let me know, I will be sure to look out for ya'.

          Mangia! I'm so happy for you, Chef! But what makes you think you'll "clock in and out without all the headache" ??? Darlin' you'll be lovin' your job, and lovin' that place, and then when something wants to bring it down, you'll be taking care of business no matter what the clock says. Headaches? I've had a few (we're all supposed to be singing like we're Dean Martin or Frank Sinatra here!).

            I'm there too. Heck, I live just a few blocks away!

            Will order the PENNE GORGONZOLA: Penne Pasta With Gorgonzola Cheese @ $8.90 <---- the cheapest pasta dish on the menu!

            Then I want you to "pull strings" and have some of that one-pound lobster added on top (hell if the cheese doesn't work with that, I still want it!). All at that $8.90 price.

            And remember da' "HT Kama'aina Discount". Wink wink. Just kidding!

            Gongrats! Hopefully this place works out for you. Lewers street can SLAM during peak hours, so be prepared.

              nah hun(lavagirl), just in comparison to my last life on the mainland

              I am a HUGE believer in quality of life and that is the goal here, I know that there will be the proverbial headache, but I am not gonna be dealing with the volume, the staff of 32, the 3.3 million in sales a year, the calls at 4 in the morning wondering if it was "cool" to not come in in the morning from some half wit breakfast cook...you get the gist. And you are 100% right, someone WILL wanna throw a stick in the works but I have a good philosophy for that, 1: Avoid conflict with calm, poise, and balance, and 2:It's lunch and dinner, NOT life and death

              They are averaging 300 covers a night, that is a lay up drill for me, a light work load.

                  Marriott, but went to the beachwalk one for lunch today durring the final meeting, BIG difference between the two.

                      lol, well. Nothing involving food. The beach walk locale has practically the same menu, sans the proper entrees at the Marriott locale. The BIG difference is the size in general, and I much prefer the more polished look of the Marriott location. The food I had today: beef carppacio, Caesar Salad, Penne Arribiata, Gnocchi, and the "Owners" Pizza were all great. Nothing stellar, but great(to be fair, I am jaded and over critical though with restaurant food). WE offer the same at the other location but I like the grilled entrees, or Secondi, at the Marriott.

                      So, Nothing bad. I just prefer the look and feel of the Marriott one.
